We usually make a casserole with whatever goes together from the cupboard. We use rice, wild rice or pasta as the base.
How about trying my very easy “Stuffing Casserole?” I prefer to cook from scratch but you can make substitutions if that’s not your preference.
Make a light cheese sauce, and layer with sauteed mushrooms, carrot coins, chopped squash, and a little onion. Then add a layer of old bread cubes mixed with sauteed celery, garlic, onion, poultry seasoning, pepper. Do not add fat or chicken broth. Repeat layers. Top with a little crushed up stuffing.
