Cheese is often overlooked as a budget-friendly ingredient. Often because it’s usually something we have to use in addition to something else — bread, meat, in soups or salads. It can be over-budget to make meals like quesadillas, nachos, Caesar salad, minestrone or broccoli cheddar soup, the list can go on forever. So many of these recipes have well over five ingredients and can prove to be time-consuming. But, what if we said we had a recipe you can make with cheese and just one other ingredient? A recipe that costs less that $0.87 per serving is worth a shot in our book.
Averie Sunshine’s 110-Calorie Mozzarella Sticks are a great first step in this direction (see below). Serve this with bottled marinara sauce or your own homemade sauce.
She took a traditionally deep-fried appetizer, eliminated the frying component, replaced the breading with an egg roll wrapper, and replaced regular mozzarella cheese with low-calorie mozzarella cheese. Genius, right? We were so inspired by this simple idea that we thought we could also make this with other cheeses for other purposes.
Try this idea with low-fat or low-calorie cheddar cheese for our version of 2-Ingredient “Grilled” Cheese Dippers. Dipping these delectable (and low-calorie) cheese sticks into a warm bowl of tomato soup is delightful, and has way fewer calories than your traditional grilled cheese sandwich. Serve this with your favorite tomato soup recipe or canned soup.
You can also make this recipe with wonton wrappers for smaller versions and serve as an appetizer for any party. Regardless of how you serve them, this cheap and easy recipe is a perfect choice for your salty cravings when you’re on a budget.
