Interestingly enough, this recipe, which comes from Christy Denney from The Girl Who Ate Everything, is also very family friendly, budget friendly, and can even be made entirely in the microwave. How easy is that?! If you’ve ever had trouble getting the little people in your family to eat sweet potatoes, you have to try this. It uses simple ingredients and basic pantry ingredients to sweeten up these sweet potatoes. Plus, the added crunch on top of these mini casseroles adds a beautiful dichotomy of textures.
Did you know that, pound-for-pound, the sweet potato is the most nutritious item in your grocery’s produce department? Yeah, pretty awesome.
